Meat: Pork

Pork - steak with apples and cauliflower purée

Appropriate wine: Merlot

For four people:
Purée: 200 g cauliflower
100 ml milk
100 ml cream
30 g butter, salt
Apples: 1 apple
a tablespoonful of butter, 1 tablespoonful of sugar
4 tablespoonful of white wine
Steak: 4 pork – steaks (140 g)
grated pepper
2 tablespoonful of oil
a tablespoonful of butter
1 rosemary
4 sage leaves
4 tablespoonful of white wine

Purée: Cut the cauliflower into dices. Cook it with milk, cream, butter and salt for 20 minutes. Afterwards puree it.
Apples: Peel the apple and cut it into thin slices. Caramelize the butter and the sugar in a pan, add a little white wine and the apple slices and let them soak the caramel for 2 minutes.
Steak: Season the pork – steak with salt and pepper. Heat some oil in a pan and add the pork – steak. Roast it on one side for 3 minutes and on the other side for 2 minutes. Take the steaks out of the pan and let them cool off for a few minutes. Throw away the oil and add the cold butter, the rosemary and the sage leaves. Sprinkle some white wine on it and cook it this way for a few minutes. Afterwards strain it.
Conclusion: Put the pork – steak s on plates and arrange the apple slices next to them. Serve them with the cauliflower purée, the sauce and the parsley leaves.
