Speck dumplings in brodh
Approriate wine: Lagrein Rosé
For four people: (approx. 8 dumplings)
Ingredients: 150 g cut white bread
40 g onions
a tablesponnful of butter
80 g Speck, cut into thin slices
2 tablespoonful of flour
100 ml milk
a tablespoonful of parsley or thin cut chive
Additional: a tablespoonful of thin cut chive
2 l bordh (meat soup)
Dumplings: Cut the white bread into little dices as well as the onions. Afterwards you have got to stew the onions in butter, pour them onto the diced bread and mix it together. Add the flour and the sliced speck. Stir the eggs, the milk, the parsley and the salt, pour it onto the bread and once again mix it well. Leave the dough still for 15 minutes , before you can form the dumplings with both of your hands. Slide them into saltwater cover the pot half and let it boil. Serve the speck dumplings in a bordh and sprinkle it with the cut chive!
